RECIPE: - yellow squash cut in 1/2 drizzle olive oil or duck fat like I did, S&P, then place in oven at 400 for 15 min - eggplant or zucchini cut into coins & roasted in oven at same temp & time - grass fed beef mixed with 1 egg, 1/4 cup grated parm, 1 tbsp salt and pepper, tsp garlic & smoked paprika - mash up & form into 12 balls - cook on cast iron 5 min each side (till cooked) - take out squash & shred with fork - plate it with meatballs, eggplant, sundried tomatoes or marinara (clean ingred
